Kyoto is Japan's culinary counter-weight to Tokyo — where Tokyo is bold and brash, Kyoto cuisine (Kyo-ryori) is restrained, seasonal, and deeply tied to its 1,200-year history as the imperial capital. The city's defining traditions are kaiseki (multi-course haute cuisine), shōjin ryōri (Buddhist temple vegetarian food), yudofu (silken tofu simmered in kombu dashi), and wagashi (tea ceremony sweets), all shaped by Kyoto's exceptionally soft spring water. Nishiki Market — a 400-metre-long covered arcade in central Nakagyo known as "Kyoto's kitchen" — is the best single street for tasting tsukemono (brined vegetables), fresh tofu, grilled skewers, and Kyoto-style sweets without committing to a sit-down meal. Prices range from ¥1,500 for an obanzai (home-cooking) lunch set to ¥50,000+ for an evening kaiseki course.

Local tip

Book kaiseki lunch rather than dinner: kitchens at Kikunoi, Roan Kikunoi, and Gion Sasaki offer the same seasonal menu at lunch for roughly half the dinner price, and tables are easier to secure. Gion district is extremely congested on weekends — Higashiyama and Arashiyama are better explored on weekday mornings before 09:00, when temples open but the tour buses haven't arrived. Reservation lead times for top kaiseki restaurants can run 1–3 months; book before you book your flights.
