Lille Bageri opened in summer 2018 on Refshaleøen with a Kickstarter-funded oven, sourcing flour from Kragegården on Fyn and Kornby Mølle north of Copenhagen — a grain-focused ethos that draws bakers from around the world. The spandauer with vanilla custard and a buttery croissant are the daily items; the remote island location means shorter queues than city bakeries, but budget 20 minutes for the harbour bus.
