Juno the Bakery opened in 2017, founded by Emil Glaser (ex-Noma) and Nina Schmiegelow; Glaser grew up with Swedish cardamom rolls and wanted to bring them to Copenhagen's bakery scene. The signature cardamom snegl is large, loosely wound with a lacquered glaze and yielding laminated layers; pastries sell out by 11:00 on weekdays, earlier on weekends.
