Hangzhou is one of China's most celebrated food cities, home to a distinct regional cuisine counted among the country's eight great culinary traditions. The kitchen is defined by fresh West Lake ingredients — grass carp, lotus root, bamboo shoots — combined with Shaoxing rice wine, dark vinegar, and a light hand with sugar that produces a subtly sweet, never cloying flavor profile. Longjing (Dragon Well) tea, grown in the hills above the lake, is woven into dishes as well as cups: tea leaves appear in prawns, pastries, and house-brewed teas at most traditional restaurants. Local tip

The best-value Hangzhou meals are not at the lake — they are at the farmers' eateries (nóngjiā lè) in Meijiawu tea village and Longjing village, 20–30 minutes by taxi from the city center, where a full table of West Lake fish, Dongpo Pork, and Longjing Prawns costs half what you'd pay at Lou Wai Lou. If you are eating at a heritage restaurant, book a table for 11:00 or 17:00 sharp; window seats overlooking the water go within minutes of opening.
